Fresh Side Salad

Serves 4

Ingredients:

  • 10 oz baby spinach

  • 1 cup sliced cucumber

  • 2/3 cup crumbled goat cheese

  • ½ cup red onion, finely sliced

  • ½ cup dried cranberries

  • ½ cup walnuts, coarsely chopped

  • 1 avocado, sliced

  • Balsamic dressing (store bought or homemade – recipe below)

Instructions:

1.     Add spinach to large bowl and top with all remaining ingredients, except dressing.

2.     Serve with dressing.

*If making homemade balsamic dressing, whisk together ¼ cup balsamic vinegar, ¼ cup olive oil, ¼ cup plain Greek yogurt, 1 tsp Dijon mustard, 1 tsp honey, ½ tsp garlic powder, ½ tsp salt, ½ tsp pepper.
